Caramelized Onion & Brie Tarts
1 L finely chopped onion
25mL unsalted butter
2 eggs
1mL salt
1 clove minced garlic
5mL sugar
175mL half&half
125g brie cheese, chilled
48 unbaked mini tart shells
Pear Chipotle Grill Sauce or Pomegranate & Mango Chipotle Sauce
Slowly sauté onion and garlic in butter until soft and light golden, about 25-30 minutes. Sprinkle with sugar and continue to cook for 1 minute. Remove from heat. In another bowl beat the eggs, cream and salt. Remove rind from the brie and dice into small pieces. Combine the egg mixture and brie with the onions. Fill tart shells and bake at 350°F for 20 minutes. Remove from oven and top each tart with ½ teaspoon of Pear Chipotle Grill Sauce or Pomegranate & Mango Chipotle Sauce. Return to oven and continue baking for another 10 minutes.
Tarts may be frozen for up to 1 month. If you are making them ahead and freezing them, cook the tarts for 25 minutes and don't add the sauce until it is time to reheat the tarts for serving. Place frozen tarts on cookie sheet, add the sauce topping and reheat at 350°F for 15 minutes.
